there are only 3!

  • 1 piece of beef of about 600g.
  • 1kg. of coarse salt
  • 1/2 kg of sugar
  • Seasonings of your choice (I put: rosemary, mustard seed, pepper, bay leaf and paprika)


How to make cured meat

it's very simple!

1. Mix the salt, the sugar and the seasonings.

2. In a deep source, put 1/3 of the mixture. On this bed, put the meat and cover completely with the mixture. Cover with cling film and refrigerate for 24 hours.

3. Repeat the operation by changing the mixture of salt, sugar and seasonings. Refrigerate other 24 hours a day.

4. From here you can already take. The time will depend on the meat and its thickness. The operation can be repeated as many times as for the meat, which is how we like it. A good indicator of that is already cured is that it is well dark outside and hard.

5. Once we left the wash to remove excess salt. Already I was able to eat, cut very thin.
